WOSS 2.1.0 should be integrated in DESERT
the v2.1.0 has several new pre-requisites:
- new HDF5 lib with updated install instructions, which require cmake, ninja
- new netCDF-C library with updated install instructions, which require cmake and ninja
- new WOSS install instructions, which require cmake and ninja
- woss samples should be updated, pointing to latest GEBCO 2026 sub ice
